Recipe
Haskap berry lemonade with ginger
A refreshing summer drink: the fruity tartness of haskap, lemon and a distinct note of ginger.
Time: 15 min

Ingredients
- •1 cup of fresh or frozen haskap berries
- •1 litre of cold water
- •3–4 tablespoons of honey or maple syrup (to taste)
- •juice of 1 lemon
- •a piece of fresh ginger (about 2–3 cm), grated or thinly sliced
- •a few mint leaves
- •ice to serve
Method
- 1Blend the berries (no need to thaw frozen ones) with half of the water into a smooth purée.
- 2Pour the purée through a fine sieve or cheesecloth to separate the juice from the seeds and skins.
- 3Add the rest of the water, the lemon juice, the ginger and the honey, and stir.
- 4Taste and add more honey if needed (when the berries are very sour) or more lemon juice.
- 5Serve with ice, mint leaves and a slice of lemon.
Tip: Quicker version: instead of berries, use 250 ml of our haskap berry juice with ginger and top up with cold water.
